This is delicious and has the added benefit of being quick and easy. I made it for our (my DH and I) lunches for the week. Couldn't find any sun dried tomatoes that weren't either A: outrageous cost wise or B: not packed in oil, so instead I used a generic jarred tomato bruschetta mix that I added to the mayo, basil, and red pepper. So good. We were fighting over who got to take the last piece for lunch.

Very good sandwich. Ended up using mrs dash sun dried tomato and basil seasoning and dried basil instead of fresh (just reducing the amount alittle). Since I couldn't find plain focaccia bread, I ended up getting feta cheese and spinach one...still turned out very yummy.

I LOVE this sandwich. In fact, it is the best sandwhich in existence to me at this moment. I used dried sun dried tomatoes from Henry's and chopped them up really small...it turned out perfect.

Delicious and easy. Great use of Spinach. I used chives instead of basil because that's all I had and it was still tasty. ALways good when a sandwich doesnt need cheese.

This was a delicious sandwich and we did not change a thing. We did use a really nice tomato basil focaccia we found at the store. Will definitely make it again.
