Ham Salad Tea Sandwiches

Yield Makes about 3 cups
Made with sweet-hot pickled okra and hard-cooked eggs, Ham Salad Tea Sandwiches are a crowd-pleasing favorite sandwich filling. Plan on 1⁄4 cup filling for each whole sandwich. Freeze bread slices until firm. (This makes it easier to trim and cut the sandwiches.)

Ingredients

  • 1 pound chopped baked ham
  • 3 hard-cooked eggs, peeled and grated
  • 2/3 cup mayonnaise
  • 1/2 cup finely chopped sweet-hot pickled okra
  • Salt and pepper to taste

How to Make It

  1. Process ham, in batches, in a food processor until coarsely ground, stopping to scrape down sides as needed. Place ground ham in a bowl, and stir in eggs, mayonnaise, and pickled okra. Add salt and pepper to taste.

  2. Spread on: rye bread slices.
