Ham, Cheese, and Apple Panini
If you don't have a panini press, you can make these easy sandwiches in a nonstick skillet, much like you make grilled cheese sandwiches.

Ingredients
- 1 tablespoon apple jelly
- 1/4 cup Dijon mustard
- 8 (1-ounce) slices gluten-free bread
- 8 slices lower-sodium deli ham (6 ounces) {Check for Gluten}
- 4 (0.8-ounce) cheddar cheese or cheddar-flavored nondairy slices
- 1 Granny Smith apple, cored and cut into 24 thin slices
- Butter-flavored cooking spray
Preparation
- 1. Preheat panini press.
- 2. Microwave jelly at HIGH 10 seconds or until it melts. Combine jelly and mustard; spread mixture evenly over 1 side of 4 bread slices. Layer 2 ham slices, 1 cheese slice, and 6 apple slices over mustard mixture on each bread slice; top evenly with remaining bread slices.
- 3. Coat sandwiches with cooking spray. Add sandwiches, 2 at a time, to panini press; grill 2 minutes or until toasted.
