Ingredients

  • 1 (14 1/2-ounce) can whole tomatoes, undrained
  • 1 cup regular rice, uncooked
  • 1 cup minced onion
  • 1 cup (4 ounces) shredded Cheddar cheese
  • 1 cup diced celery
  • 1 cup boiling water
  • 3/4 pound ground, cooked ham
  • 1/3 cup olive oil
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon pepper

Preparation

  1. Combine all ingredients in a large mixing bowl, stirring until well blended. Spoon mixture into a lightly greased 2-quart casserole. Cover and bake at 325° for 2 hours or until rice is tender.
