Grilled Zucchini and Bell Pepper Couscous

- 3 zucchini 1/4 slices
- 2 red peppers quartered
- 2 teaspoon(s) olive oil
- 3 clove(s) garlic minced
- 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) cumin seeds
- 3/4 cup(s) chicken broth
- 1 cup(s) water
- 1 cup(s) couscous
- Prepare grill. Slice zucchini; quarter peppers; brush grill and veggies with oil; cook till tender (5 min each side)
- Mince garlic and mash with salt to paste. in dry saucepan toast cumin seeds; 1 minute. Add broth adn water and bring to boil. Add couscous and cover pan. Let stand 5 minutes. Fluff couscous, mix with vegetables, garlic paste and salt as needed.
