Grilled Vegetables and Chickpeas with Couscous

WOW! The dish looked pretty good but I really wasn't expecting it to be anything to write home about. I was wrong -- this is a new summertime favorite! The feta topping was so yummy, I just put it out on the table so we could each get as much as we wanted. Will definitely make for guests.

Definitely not my family's favorite recipe. It was rather bland.

This was good, but not a hit with my family. They wished there was more couscous, and more lemon juice. Loved the grilled veggies though!

This was good but needed more flair. I'm making it again with Kalamata olives and will mix in a little of the brine to flavor the couscous. I agree with needing more lemon juice. It's a good basic recipe and lends itself well tailoring to personal taste.
