My husband declared this to be the "best sandwich ever" after I made these for dinner last night.Two substitutions, I think, made the sandwiches even more delicious: #1 Because I'm not a fan of Texas toast, I substituted a thick-cut multi-grain bread, but the flavors of this sandwich are really quite delicious! #2 Didn't think American cheese would quite hit the spot for us, so I upgraded to Dubliner (tasted like a cross between aged cheddar & Parmesan) and THAT was a delicious change! On a last note, personal preferences of my family members gave me the chance to mess around with the mustard--and there were no losers. I had Boetje's (spicy) mixed with Dijon, my daughter had just Dijon & my husband preferred plain old yellow mustard--nobody complained with any combination! Great sandwich

Ingredients
- 1/4 cup spicy brown mustard
- 8 (2-ounce) slices Texas toast
- 4 ounces thinly sliced cooked turkey breast
- 8 (1/4-inch-thick) slices tomato
- 4 (3/4-ounce) slices American processed cheese
- 1/4 cup bottled real bacon bits
- Black pepper
- Cooking spray
Preparation
- Spread 1 1/2 teaspoons mustard over each bread slice. Layer each of the 4 slices with 1 ounce turkey, 2 tomato slices, 1 cheese slice, 1 tablespoon bacon bits, and a dash of pepper. Top with remaining bread slices. Heat a large nonstick skillet coated with cooking spray over medium heat. Place 2 sandwiches in the pan; cook 2 minutes on each side or until toasted. Repeat procedure with remaining sandwiches. Cut each sandwich in half.
