Grilled Tilapia with Shirazi Salad

Grilled Tilapia with Shirazi Salad

Shirazi is a traditional Mediterranean salad composed of fresh parsley, cucumber, tomato, and red onion. It pairs well with the mild, sweet flavor of tilapia.

  • Yield: 4 servings (serving size: 1 fillet and 1/4 cup salsa)

  • 3/4 cup chopped fresh parsley
  • 2 tablespoons diced peeled cucumber
  • 2 tablespoons diced tomato
  • 2 teaspoons diced red onion
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon pepper, divided
  • 4 none (6-ounce) tilapia fillets
  • none Cooking spray
  • none Lemon wedges

Combine first 7 ingredients. Stir in 1/8 teaspoon each of salt and pepper. Cover salsa, and chill at least 30 minutes.

Preheat grill.

Sprinkle fish fillets with remaining 1/8 teaspoon each salt and pepper. Place fillets on grill rack coated with cooking spray; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with salsa and lemon wedges.
