- 6 (1-inch-thick) swordfish steaks (about 2 pounds)
- 1/2 cup vegetable oil
- 1/4 cup lemon juice
- 2 teaspoons salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon Worcestershire sauce
- Dash of hot sauce
- Lemon wedges (optional)
How to Make It
Rinse steaks thoroughly in cold water; pat dry. Cut fish into 6 serving-size pieces, and place in a well-greased wire grilling basket. Set aside.
Combine next 6 ingredients. Baste fish with lemon juice mixture; sprinkle with paprika.
Grill over medium coals 8 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with lemon juice mixture and sprinkling with paprika. Serve with lemon wedges, if desired.
