Ingredients
- 4 sweet potatoes, peeled and cut into 1/2-inch slices
- Vegetable cooking spray
- 1/2 cup diced red bell pepper
- 1/4 cup sliced green onions
- 1/4 cup chopped flat-leaf parsley
- Basil Vinaigrette
Preparation
- 1. Coat both sides of sweet potato slices with cooking spray.
- 2. Grill potatoes, covered with grill lid, over medium-high heat (350° to 400°) 6 minutes on each side or until tender. Cool slightly, and cut into 1-inch cubes. Combine potatoes, bell pepper, onions, and parsley in a large bowl; toss with Basil Vinaigrette.
