The tomatoes were a bit mushy from cooking in the grill pan, but the flavors of this in mid-winter were still a nice summer-y burst in the kitchen. I'd cut the red onion next time, decrease the vinegar slightly, and increase the basil olive oil, but the basic flavors are quite yummy. The steak was grilled to perfection. Added roasted potato wedges and a mixed green salad on the side.

Good weeknight recipe! Two notes: 1) no need to make your own basil oil since you need so little; I had some on hand from a 'fancy' giftbox we got and I don't think it made any difference to have basil olive oil vs. regular when all you use is 1 tsp. 2) I didn't let my tomatoes sit for the full 1/2 hr and I didn't notice any issues; they only sat for ~15 min till the steak was almost done on the grill and it worked out just fine. Super easy to make, but with pretty big flavors from the salsa. Served with grilled fresh green beans and some croissants for a hearty / flavorful meal. Enjoy!
