Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness using a meat mallet or rolling pin. Rub evenly with olive oil, and sprinkle evenly with chili powder, garlic salt, and paprika.
Grill chicken, covered with grill lid, over medium-high heat (350° to 400°) 4 minutes on each side or until done. Serve with Pineapple Salsa. Garnish, if desired.
This recipe is wonderful. Keep in mind to be careful with how much heat you add with the chipolte peppers!! I use chicken tenderloins so I don't need to pound my chicken breasts. My family LOVES it and we definitely get a lot of requests for it at family functions.

This is so easy and delicious! I tone down the chipotle since I like it on the mild side and also have added blackbeans to to the salsa. I would definitely serve this to guests. I serve with yellow rice & green salad OR make soft tacos w/ 6" flour tortillas and a side of guacamole :)
