Grilled Red Pepper and Eggplant

  2. U.S. Metric Conversion chart
  3. 2 red bell peppers
  4. 8 slice(s) eggplant, 1/2-inch thick
  5. 3 tablespoon(s) olive oil, plus more, for grilling
  6. 1 tablespoon(s) red wine vinegar
  7. 1 tablespoon(s) fresh oregano, chopped
  8. 1/2 cup(s) crumbled feta
  9. Salt and pepper

  11. Directions

  12. 1.Preheat the grill. Coat peppers and eggplant slices with olive oil. Grill and arrange on a platter.
  13. 2.Top vegetables with 3 tablespoons olive oil, and red wine vinegar. Add oregano and feta, season to taste with salt and pepper.
