  • 3 tablespoons balsamic vinegar
  • 2 teaspoons olive oil
  • 3/4 teaspoon Greek seasoning
  • 1 large red onion, cut into 4 (1/2-inch thick) slices
  • 2 large zucchini, halved lengthwise
  • Cooking spray


  1. 1. Prepare grill.
  2. 2. Combine first 3 ingredients in a large bowl. Add onion and zucchini, and toss to coat.
  3. 3. Place vegetables on grill rack coated with cooking spray; cover and grill 10 to 12 minutes or until vegetables are tender.
