Grilled-Pineapple Salsa

    This salsa turned out amazing. I did not add the ginger, but would suggest using a little more sugar and some salt to bring out the flavor. I served this salsa with carnitas and it really made the pork flavor come alive. I will make this dish again for special occasions, particularly for summer events.

    The salsa is delicious. I sprinkled a little ground ginger instead of the crystallized...I don't know that it added anything. Otherwise, I followed the recipe exactly. I am serving the leftovers tomorrow night with the Bayou Catfish Fillets.
