Grilled Pineapple and Avocado Salad

Ingredients

  • 2 small pineapples, peeled, cored, and sliced
  • 1 tablespoon sugar
  • 1/4 teaspoon ground red pepper
  • Cooking spray
  • 8 cups torn Boston lettuce
  • 1 3/4 cups chopped seeded cucumber
  • 1 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons fresh lemon juice
  • 1 1/2 teaspoons salt
  • 1 teaspoon extravirgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1 diced peeled avocado

Preparation

Prepare grill.

Pat pineapple dry with paper towels. Combine sugar and red pepper in a small bowl; sprinkle pineapple evenly with sugar mixture. Place pineapple on grill rack coated with cooking spray; grill 4 minutes on each side or until golden. Cool completely; chop.

Place pineapple in a large bowl. Add lettuce and remaining ingredients; toss well. Serve immediately.
