1/2 cup butter, softened
1/4 cup seedless blackberry preserves
2 tablespoons finely chopped fresh basil
Garnish: fresh basil leaves
How to Make It
Stir together softened butter, blackberry preserves, and chopped fresh basil until blended. Garnish with fresh basil leaves. Serve with warm grilled peaches, or spread inside hot biscuits filled with thinly sliced pork tenderloin.
This was a wonderful use of the peaches we got at the farmers' market today. So simple, but so flavorful. Mine was actually "Cherry-Basil Butter" because I had homemade cherry preserves but not blackberry. Still delicious.
This was enjoyable. Finally enticed my kids to try it after initially balking at it and they loved it. The only problem i had was pitting the peaches. One side was easy to get off, the other side even with a spoon tended to break apart. I did not use overripe peaches. Definitely a keeper.
The butter is different and really good. I used it with the pork tenderloin on tea sized biscuits. The flavors are unique but blend together really nicely. People were intrigued by the flavor they loved it, but couldn't figure out what it was. Even the foodies loved it!
