Grilled Lime Vinaigrette
This recipe goes with Grilled Sardines with Mesclun and Grilled Lime Vinaigrette
Yield: 3/4 cup
- 2 large limes, halved
- 1 tablespoon minced fresh cilantro
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 cup olive oil
- Grill lime halves, cut side down, without grill lid, over medium-high heat (350° to 400°) 5 to 6 minutes.
- Juice lime halves; reserve rind for garnish, if desired. Add remaining ingredients. Cover tightly, and shake vigorously. Chill thoroughly.
