Ingredients
- 1 cup dry white wine or low-sodium chicken broth
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon grated lime rind
- 2 tablespoons fresh lime juice
- 1/2 teaspoon freshly ground black pepper
- 6 (6-ounce) skinless, boneless chicken breast halves
- Cooking spray
Preparation
- Combine first 5 ingredients in a shallow baking dish. Add chicken, turning to coat. Cover and marinate in refrigerator 1 hour.
- Prepare grill.
- Remove chicken from marinade, reserving marinade. Place marinade in a small saucepan; bring to a boil, and remove from heat. Place chicken on grill rack coated with cooking spray; grill, covered, 5 minutes on each side or until done, basting with marinade. Remove from grill, and serve immediately.
