Grilled Lemon-Dijon Chicken Thighs with Arugula Salad

    My husband is not a chicken thigh fan and really liked these and wants me to make them again. I did not have lemon juice on hand, so I substituted 1tsp white vinegar. I think the juice would have added a nice touch of freshness to it, so definitely will do that next time.

    I'm not usually a chicken thigh fan but this chicken was moist and flavorful and I would have definitely had seconds. The dressing was tasty and I agree with some of the other reviews that the addition of some grilled veggies to this salad could make it even more delicious. Will make again.

    Outstanding salad. I marinated the thighs for an hour and grilled them. I also used baby romaine lettuces as my husband doesn't care for arugula. Delicious. Next time I plan to add grilled vegetables to the salad. Very easy for a quick weeknight meal.

    Chicken was tender, juicy and flavorful. Arugula salad and dressing was great. It came together quickly and easily. My family (including kids) loved it. Will make it again.

    This was really good I used chicken breast instead. The dressing was out of sight!!! Will be making this again

    First time I could get my family to eat Chicken Thighs. They scarfed it down and asked for secondst! Also beefed up the salad with grilled asparagus, green onions, and red onions and served over a spring mix. Adding the hot chicken and veggies made the salad more of a "wilted" variety which made me nervous to serve to my picky husband but he devoured it!

    Really good, quick, easy and light. We don't like our dressing so sweet so next time I would reduce the honey by half and use half balsamic and half red wine vinegar dressing.

    Really easy & tasty - I made the following changes: Used chicken breasts Added a bit more garlic to the marinade Used a different kind of lettuce since I couldn't find arugula Used agave nector instead of honey since I didn't have honey on hand

    This was amazing! We used grilled chicken breast instead, and turned out PERFECT for a summer evening dinner. I plan to do the same as another reviewer and add some grilled veggies either on the side or to the salad as well. Looking forward to making some more with left over chicken tonight!

    Tastes like something out of a restaurant. Light, tasty. Hubby used the outdoor grill which probably added some flavor.
