Grilled Flank Steak with Tomato, Avocado, and Cucumber Salad

    We liked this dish quite well, kids included. To reduce labor, we cooked the flank steak in the electric skillet, otherwise following the recipe.

    Only made the salad- It's definitely a keeper! Outstanding as a side (we had ours with roast chicken) or on its own for a lunch or with shrimp thrown in for dinner.

    The steak was okay - nothing special. The salad was fine - I would probably make it again omitting the lettuce and making it more of a traditional side dish, as opposed to a salad.

    This is one of our favorite salads! Steak, avocado, and spicy/sour dressing; how could it be any better? I recommend using hydroponic butter lettuce, if you can find it. Super Tasty!

    The steak was just so-so. The real star here is the salad, which has become one of our go-to's for busy weeknight or even entertaining. The kids love it and it's wonderfully fresh and healthy.
