Place corn on a grill rack coated with cooking spray; cover. Grill corn 12 minutes or until lightly charred, turning occasionally. Place hot corn in mayonnaise mixture; toss to coat. Place corn on a platter; sprinkle with cheese and chile powder.
I wrapped the corn in foil to grill. Made the sauce ahead of time. Added a bit more chipotle than recipe called. The corn was so tasty and delicious. I even cut leftovers off the cob to have for lunch the next day. Great twist on typical corn on the cob.
