A wonderful, tasty summer dish! Loved the grilled corn! I'll definitely make again.

This risotto tastes absolutely amazing. The lemon, tarragon, and butter flavors blend together perfectly, making it addictive, but still allow the flavors of the grilled corn and bay shrimp to pop. Be sure to use unsalted butter to add extra butteriness. I plan to make it again and again, special occasion or not!

So good - the flavors go together really well. I only had two ears of corn, but it was plenty. Also used dried tarragon since I couldn't find any fresh. I had about a cup of broth left once my risotto was done, so I would recommend not starting out with all of the broth. This is very filling if made for 4 people (instead of the recommended 6). Hard to believe that there is no cheese in this!

I am allergic to parmesan, so don't often find a risotto recipe I can make. As one of the other reviewers said, this recipe is so good that you don't even notice the cheese. The only change I would make is to use less lemon juice. I would use only 1 tbsp., as it overpowers the tarragon a bit.
