Grilled Chicken, Corn, and Spinach Salad with Smoky Paprika Dressing

    Thank you Sunset for some new and different chicken recipes. I made this one and the Mango chicken (both from the June 2012 issue of Sunset). Excellent! doubled spices used smoked paprika. The grilled portabella mushrooms tasted like delicious steak. I used twice the number of portabellas the second time I made it. Made it for my pregnant sister and her hubby so we used organic chicken which made it all the tastier. The chicken was moist, tender and delicious. Super yum!

    I will definitely be making this again! So easy and good! I didn't have sherry vinegar, so used balsamic. Definitely use hot smoked paprika...it makes a huge difference.
