I made this tonight and it turned out perfect. I added honey to the marinade in addition to the brown sugar, otherwise, followed the recipe as published.

Soak Plank: 1 Hour
- 2 pound(s) fresh steelhead trout fillets
- 1 cedar plank (soaked)
- 2 tablespoon(s) vegetable oil
- 3 tablespoon(s) soy sauce
- 1 teaspoon(s) minced garlic
- 1/3 cup(s) bourbon or chardonnay
- 1 tablespoon(s) brown sugar
- Salt and pepper to taste
- 1. Combine all ingredients except the trout and blend to make marinade.
- 2. Marinate the fish in the refrigerator for 30 minutes to one hour.
- 3. Soak the cedar plank in water for a minimum of one hour prior to grilling
- 4. Place the marinated fillet skin side down onto the soaked cedar plank.
- 5. Place the planked fish on a hot grill and close the lid. The plank will begin to smoke.
