Ingredients

  • 1/2 cup plain nonfat yogurt
  • 2 tablespoons brown sugar
  • 2 tablespoons sherry vinegar
  • 1/4 teaspoon apple pie spice
  • Dash of salt
  • 4 cups torn Bibb lettuce
  • 1 cup torn curly endive
  • 1 cup loosely packed fresh watercress
  • 6 (1-ounce) slices lean turkey ham, cut into thin strips
  • 2 medium-size ripe pears (about 3/4 pound), cored and thinly sliced
  • 3 tablespoons finely chopped walnuts, toasted
  • Swiss Cheese Toast

Preparation

  1. Combine first 5 ingredients in a small bowl, stirring well. Cover and chill 1 hour.
  2. Arrange lettuce, endive, and watercress evenly on 4 plates. Arrange turkey ham and pear slices over greens. Drizzle 3 tablespoons yogurt mixture over each, and sprinkle with walnuts. Serve with Swiss Cheese Toast.
