Greens with Black Cherry Dressing
In this salad, you'll taste a delicious marriage of flavors as candied nuts, crisp bacon, and Parmesan cheese are tossed with greens and dressed in a wine vinaigrette. For the dressing, look for a Pinot Noir whose label boasts notes of black cherry. Then serve the same bottle to start off the meal.

Ingredients
- 1/2 cup extra virgin olive oil
- 3 tablespoons Pinot Noir
- 1 tablespoon white vinegar
- 2 teaspoons Dijon mustard
- 1 small shallot, minced
- 1/8 teaspoon salt
- 1/8 teaspoon sugar
- 1/8 teaspoon freshly ground pepper
- 6 to 8 cups mixed salad greens
- 1 (8-ounce) package sliced fresh mushrooms
- 6 slices bacon, cooked and coarsely crumbled
- Candied Walnuts
- Freshly shaved Parmesan cheese
Preparation
- Combine first 8 ingredients in a jar. Cover tightly and shake vigorously until blended. Toss greens, mushrooms, and bacon in a salad bowl. Drizzle with dressing; toss gently. Sprinkle with Candied Walnuts and Parmesan cheese.
