Greens with Black Cherry Dressing

Yield 6 to 8 servings
In this salad, you'll taste a delicious marriage of flavors as candied nuts, crisp bacon, and Parmesan cheese are tossed with greens and dressed in a wine vinaigrette. For the dressing, look for a Pinot Noir whose label boasts notes of black cherry. Then serve the same bottle to start off the meal.

Ingredients

  • 1/2 cup extra virgin olive oil
  • 3 tablespoons Pinot Noir
  • 1 tablespoon white vinegar
  • 2 teaspoons Dijon mustard
  • 1 small shallot, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon sugar
  • 1/8 teaspoon freshly ground pepper
  • 6 to 8 cups mixed salad greens
  • 1 (8-ounce) package sliced fresh mushrooms
  • 6 slices bacon, cooked and coarsely crumbled
  • Candied Walnuts
  • Freshly shaved Parmesan cheese

How to Make It

  1. Combine first 8 ingredients in a jar. Cover tightly and shake vigorously until blended. Toss greens, mushrooms, and bacon in a salad bowl. Drizzle with dressing; toss gently. Sprinkle with Candied Walnuts and Parmesan cheese.
