Greens and Shallot Vinaigrette

Gourment salad greens are lightly dressed in a homemade sherried vinaigrette. Serve Greens and Shallot Vinaigrette when you need a light side salad to go along with your main dish.

  • Yield: Serves 4 (serving size: 1 1/2 cups salad)

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons sherry vinegar
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • 6 cups gourmet salad greens
  • 1 sliced shallot

Preparation

Combine olive oil, vinegar, pepper, and salt in a medium bowl. Add salad greens and sliced shallot to bowl; toss gently.
