1 cup sake
1 large shallot, thinly sliced
2 tablespoons green tea leaves
2 tablespoons mirin (rice wine)
1/2 cup heavy cream
1/2 cup butter, cut into pieces
Combine sake and next 4 ingredients in a medium saucepan over medium-high heat. Cook 5 to 6 minutes or until reduced by half. Remove from heat. Whisk in butter. Strain before serving.
