1 can (12 oz.) whole tomatillos, drained
3/4 cup fresh cilantro
2 tablespoons chopped onion
4 to 6 tablespoons lime juice
1 to 2 tablespoons chopped fresh jalapeño chilies


1. In a food processor or blender, purée tomatillos, cilantro, onion, 4 tablespoons lime juice, and 1 tablespoon chilies until smooth.

2. Taste, then add more lime juice and chilies if desired. Add salt to taste. Serve, or cover and chill up to 3 days.
