Ingredients
- 2 cups cooked long-grain rice
- 1 cup (4 ounces) shredded sharp Cheddar cheese
- 3/4 cup whole milk
- 1/2 cup chopped fresh parsley
- 1/4 cup margarine, melted
- 3 eggs, separated
- 1/4 cup chopped green pepper
- 1/4 cup finely chopped onion
- 1/2 teaspoon salt
- 1 (4-ounce) can chopped green chiles, drained
Preparation
- Combine first 5 ingredients in a large bowl; stir well. Stir in egg yolks, green pepper, onion, salt, and green chiles.
- Beat egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into rice mixture. Spoon mixture into a lightly greased 2-quart baking dish. Bake, uncovered, at 350° for 30 minutes or until thoroughly heated.
