  • 2 1/2 cups shelled fresh green peas, cleaned (about 2 1/2 pounds unshelled)
  • 1 cup water
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon salt
  • Dash of pepper
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 3 tablespoons milk


  1. Combine peas, water, butter, 1/4 teaspoon salt, and pepper; bring to a boil. Reduce heat; cover and simmer 15 minutes. Set aside.
  2. Combine flour, baking powder, and 1/4 teaspoon salt, mixing well. Add eggs and milk, stirring with a fork until dry ingredients are moistened.
  3. Return peas to a boil, and drop batter by tablespoonfuls into boiling peas. Cover immediately; reduce heat, and simmer 10 minutes.
