Green Peas

Yield 6 to 8 servings


  • 1 cup water
  • 4 cups shelled fresh green peas
  • 1 head lettuce, shredded
  • 1 parsley sprig
  • 4 green onions, sliced
  • 1/4 cup butter or margarine
  • 1 tablespoon heavy cream
  • 1 teaspoon sugar
  • 3/4 teaspoon salt

How to Make It

  1. Bring water to a boil in a large saucepan; add peas, lettuce, parsley, onions, and butter. Bring to a boil; cover, reduce heat, and cook 30 minutes or until tender. Remove parsley. Stir in heavy cream, sugar, and salt; cook 1 minute.
