Ingredients
- 1 cup pitted green olives
- 1/2 cup unsalted toasted almonds
- 1/2 cup loosely packed flat-leaf parsley leaves
- 1 small garlic clove
- 1 cup extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1 tablespoon Dijon mustard
- Freshly ground black pepper
Preparation
- 1. In a food processor, combine olives, almonds, parsley, and garlic; whirl until very finely chopped.
- 2. Add oil, lemon juice, mustard, and a generous grind of black pepper; whirl until as smooth as possible.
