Ingredients

  • 1/2 pound salt pork, cut into 1/2-inch cubes
  • 2 large onions, chopped
  • 1 clove garlic, minced
  • 2 pounds fresh green beans, snapped
  • Salt to taste

Preparation

  1. Cook salt pork in a large Dutch oven over medium heat, stirring frequently, until crisp and browned. Add onion and garlic; saute until tender.
  2. Add beans and water to cover; bring to a boil. Reduce heat; cover and simmer 1 1/2 hours or until beans are tender. Add salt.
