Green Beans Amandine

Browning the butter and almonds gives this dish an extra-nutty flavor.

  • 1 (16-oz.) package frozen French-cut green beans, thawed
  • 1/4 to 1/3 cup butter
  • 1/2 cup sliced almonds
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper


  1. 1. Cook green beans in boiling salted water to cover in a Dutch oven 4 minutes or until tender; drain well. Rinse Dutch oven well, and dry.
  2. 2. Melt butter in Dutch oven; add almonds, and sauté over medium heat 6 minutes or until butter and almonds are golden brown. Stir in green beans, 1 Tbsp. lemon juice, 1 tsp. salt, and 1/4 tsp. pepper, tossing to coat. Serve immediately.
