Green Beans Almondine
The fresh flavor of green beans really shines in this dish and the light sauce is more of a dressing.
Yield: Serves 12
- 2 tablespoons butter
- 3 pounds green beans, trimmed
- 3 cups chicken broth
- 1/2 teaspoon pepper
- 2 tablespoons cornstarch
- 1/4 cup water
- 2 tablespoons lemon juice
- 1/4 cup slivered almonds, toasted
- Melt butter in a large skillet over medium-high heat. Add beans and saute 5 minutes. Add broth and pepper; bring to a boil. Reduce heat, cover and simmer 15 minutes. Dissolve cornstarch in water; add to skillet. Bring to a boil; cook one minute, stirring constantly. Stir in lemon juice. Sprinkle with almonds.
