Green Bean Salad with Blue Cheese Dressing

Ingredients

  • 1/4 cup low-fat sour cream
  • 2 tablespoons low-fat buttermilk
  • 2 tablespoons crumbled blue cheese
  • 1 tablespoon light mayonnaise
  • 1/2 teaspoon fresh lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups trimmed and halved green beans (about 8 ounces)
  • 1/3 cup finely chopped red onion
  • 2 slices 40%-less-fat bacon (such as Gwaltney), cooked and crumbled

Preparation

  1. 1. Combine first 7 ingredients in a small bowl; stir with a whisk.
  2. 2. Steam green beans, covered, 14 minutes or until crisp-tender. Rinse with cold water. Drain well, and pat dry with paper towels.
  3. 3. Combine beans and onion in a large bowl; add dressing, and stir gently. Sprinkle evenly with crumbled bacon.
