Green Bean Quiche

What's better than a clever new guise for extra green bean casserole (onion topping and all)? One that takes just 5 minutes to mix.


  • 2 cups (8 oz.) shredded Swiss cheese
  • 1 cup grated Parmesan
  • 3/4 cup all-purpose baking mix
  • 1/2 teaspoon table salt
  • 2 cups 1% low-fat milk
  • 1/4 cup butter, melted
  • 4 large eggs
  • 2 cups leftover green bean casserole
  • 1/3 cup sliced almonds

How to Make It

  1. Preheat oven to 350°. Combine first 7 ingredients; fold in casserole. Spoon into a greased (with butter) 10-inch pie plate. Top with almonds. Bake 45 minutes or until set. Cool 10 minutes.
