Place tomatoes, olives, feta, juice, oregano, oil, pepper, chicken, and cucumber in a large bowl; toss to combine. Spread 1 tablespoon hummus over 1 side of each tortilla. Top each tortilla with about 1/2 cup chicken mixture. Roll up wraps; cut in half.

My family was looking for a stepping off place for healthy eating with flavor. This was definitely the recipe. We made a few minor changes (paper thin cut Vidalia onions, dries oregano and a literal pinch of sea salt) and I cannot eexpress how astoundedI am at not only how flavorful this is, but how much my 12 year old daughter loved and begged for it before it was even ready! This was delicious. This is what I did: I added a little red onion and chopped spinach to make it a bit more "Greek." I made up a sort of raita (cucumber, garlic, and Greek yogurt). I didn't grate the cucumber though.
This was pretty yummy and quick to make. It needs a little of more seasoning - added cracked pepper and salt; maybe more oregano, or some bell peppers? We used low carb, high fiber wraps (80 cal, 12 g fiber from Sprouts). 8 inches isn't very big - so the filling amount and hummus was appropriate. My husband isn't a huge fan of feta so 2 heapful tablespoons was good enough for us.
Fantastic. I used left over grilled chicken from dinner last night and threw this together for a quick lunch. I also used garden grown cherry tomatoes because we have an abundance right now. I will make these again, often.
