Pulse first 3 ingredients in a food processor or blender until chopped. Add lemon juice, and pulse three times. With food processor running, pour oil through food chute in a slow, steady stream; process until smooth.
I divided this recipe into thirds...wasn't easy, but worth the taste. I added a pinch of sugar and a splash of balsamic vinegar. For the salad, I used romaine lettuce, artichokes, kalamata olives, feta cheese, & salt/pepper.
Served with couscous & greek tuna steaks.
