Greek-Roasted Rutabaga

  • 1 large rutabaga, peeled and cut into 2-inch pieces*
  • 1/4 cup olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon lemon juice
  • 1 teaspoon Greek seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper


  1. Toss together all ingredients, and spread into a lightly greased 15- x 10-inch jellyroll pan.
  2. Bake at 450° for 25 minutes; stir mixture, and bake 25 more minutes.
