Greek Potato Salad
Ingredients
- 3 pounds cooked and quartered baby red potatoes
- 1 cup crumbled feta cheese with sun-dried tomatoes
- 2/3 cup pitted and coarsely chopped kalamata olives
- 1/2 cup bottled Italian or Greek dressing
- 3 tablespoons chopped fresh oregano
- Salt and freshly ground pepper to taste
Preparation
- Stir together potatoes, feta cheese, kalamata olives, Italian or Greek dressing, and oregano. Season with salt and freshly ground pepper to taste just before serving.
