Ingredients

  • 2 pounds new potatoes
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried oregano

Preparation

  1. Cook potatoes in boiling salted water to cover 30 minutes. Cool slightly. Cut into 1-inch pieces.
  2. Whisk together oil and next 5 ingredients; toss with potato.
