Greek Potato Salad

Ingredients

2 pounds new potatoes
1/4 cup olive oil
1/4 cup red wine vinegar
3 tablespoons mayonnaise
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano

Preparation

Cook potatoes in boiling salted water to cover 30 minutes. Cool slightly. Cut into 1-inch pieces.

Whisk together oil and next 5 ingredients; toss with potato.
