Greek Pasta with Shrimp and Artichokes

This zesty dish is delicious served hot as an entrée or chilled as a salad.

Ingredients

  • 6 ounces uncooked orzo (rice-shaped pasta)
  • 1 1/4 pounds medium shrimp, peeled and deveined
  • 1 (14-ounce) can artichoke hearts, drained and coarsely chopped
  • 1 cup grape tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 1/4 cup (2 ounces) crumbled feta cheese with basil and sun-dried tomatoes
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/4 to 1/2 teaspoon coarsely ground black pepper
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground red pepper

How to Make It

  1. Cook pasta according to package directions 6 minutes, omitting salt and fat. Add shrimp, and cook 3 minutes or until shrimp are done. Drain well.

  2. Combine artichokes and remaining ingredients in a large bowl. Add shrimp and pasta; toss gently. Cover and chill 10 to 15 minutes.
