Greek Medallion Salad with Warm Fruit Dressing

Yield 4 servings


  • 1 (16-ounce) package Jimmy Dean Roll Sausage, crumbled
  • 1/4 cup plain breadcrumbs
  • 2 teaspoons Greek seasoning
  • 1 bag of mixed greens
  • 1 (11-ounce) can mandarin oranges
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup apple or plum jelly
  • 1 tablespoon minced onion
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper

How to Make It

  1. Blend sausage with breadcrumbs and Greek seasoning. Grill or fry sausage until done. Remove form heat. Spread mixed greens on four dinner plates. Drain mandarin oranges. Reserve liquids. Mix with dried cranberries. In small saucepan, combine reserved mandarin orange juice with jelly, onion, salt and pepper. Bring to boil. Reduce heat. Arrange sausage on each plate. Top with oranges and cranberries. Drizzle warm sauce over salad. Serve with warm bread.
