Greek Meat Loaf

Serve leftovers in pita bread with yogurt sauce.

Ingredients

  • 2 1/2 pounds lean ground lamb
  • 1 large onion, diced
  • 1 medium-size green bell pepper, diced
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup uncooked quick-cooking oats
  • 1/4 cup chopped fresh parsley
  • 2 1/2 teaspoons dried oregano
  • 2 teaspoons chopped fresh or 1/2 teaspoon dried mint flakes
  • 2 teaspoons pepper
  • 1/2 teaspoon salt
  • 1 (8-ounce) can tomato sauce
  • 2 large eggs, lightly beaten

Preparation

Combine all ingredients in a large bowl; shape into a loaf, and place in a lightly greased 9- x 5-inch loafpan.

Bake at 350° for 1 1/2 hours or until done. Serve immediately.
