Ingredients

  • 3/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup egg substitute
  • 2 garlic cloves, pressed
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 head romaine lettuce, torn
  • 3/4 cup kalamata olives
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • Croutons

Preparation

  1. 1. Whisk together olive oil and next 6 ingredients in a small bowl. Cover and chill up to 2 days.
  2. 2. Combine lettuce and next 3 ingredients in a large bowl; gradually add enough olive oil mixture to coat leaves, tossing gently. Sprinkle with croutons, and serve with remaining olive oil mixture.
